Ok, so here's one insider tip. Canton Vaud doesn't have the restriction on picking during the first week of the month, so GstaadLife recommends making the hike from the Sonnenhof in Unterbort-Saanen over the old fortress ruins to Rougemont.

Wanderweg signs will turn to French when you cross the border. Since the law-abiding folk of Canton Bern usually start from their side, they're not in mushroom-picking mode during the first week of the month. This means that by about the 5th or so, there's often rich and legal pickings just over the cantonal line as you look down over Rougemont. Same soil, same weather, different laws. Enjoy the walk.
